Farro and shrimp salad in avocado cups

Avocado is an incredibly nutritious fruit, and we love incorporating it in our recipes. It’s loaded with Heart-Healthy monounsaturated fatty acids that has been linked to reducing inflammation and been shown to have beneficial effects on genes linked to cancer; it’s loaded with fiber and rich in vitamins!! 

Ingredients

  • 3 avocados
  • 200 g of pre-cooked shrimp
  • 100 g farro
  • 2 carrots
  • 1 celery
  • 1 shallot
  • 2 carrots
  • 10 cherry tomatoes
  • cilantro
  • extra virgin olive oil
  • lemon juice
  • salt
  • pepper

Preparation

Place the farro in a large saucepan, cover with water up to 2 inches above the grain. Bring to boil. Cover the pot, reduce heat, and simmer for 30 minutes. Drain and rinse with cold water.

Apart, place the shrimps in a saucepan, cover with salted water and simmer for 3 minutes.

In a mixer put carrots, celery, scallions, cilantro and tomatoes. Mince everything. Divide the avocado in half, remove the core, take the pulp and add it to the vegetable mix.

Combine oil, lemon juice, cilantro, salt, and pepper in a large bowl, stir with a whisk. Add farro, mixed vegetables, shrimps, and toss gently to coat.

Divide the avocado salad and shrimp in 6 half avocados cups. In a plate create a bed of Farro salad, place the avocado cup and garnish with cilantro leaves.

Insalata di avocado e gamberetti su letto di farro aromatizzato 

Ingredienti per 4 persone

  • 3 avocado
  • 200 g di gamberetti precotti
  • 100 g di farro
  • 2 carote
  • 1 costa di sedano
  • 1 scalogno
  • 2 carote
  • 10 pomodorini pachino
  • cilantro
  • olio extravergine d’oliva
  • succo di limone
  • sale
  • pepe

Preparazione

Portare ad ebollizione acqua e sale e sbollentare i gamberetti per 3 minuti. A parte cuocere il farro. In un mixer mettere le carote, il sedano, lo scalogno, il cilantro e i pomodorini e farne un trito.

Dividere l’avocado a metà, eliminate il nocciolo, prelevate la polpa spezzettarla e aggiungere al trito. Emulsionare l’olio con il succo di limone, sale e pepe. In una ciotola versare l’insalata di avocado, i gamberi e condire con il battuto d’olio. A parte condire il farro con il battuto d’olio e il cilantro. Distribuite l’insalata di avocado e gamberi nei 6 mezzi avocado. In un piatto distribuite il farro creando un letto dove adagerete un mezzo avocado e servite guarnendo con foglie di cilantro.
